Quinoa with Pecans and Raisins

Quinoa with Pecans and Raisins

Quinoa is good stuff.  It is super good for you (it’s a superfood, gluten free and a complete protein). If you have not tried it you really should.  That said, I think it is an acquired taste.  It has a unique flavor. One of the things I like so much about it is that it cooks as fast at white rice (brown rice takes FOREVER!).  SO if the flavor is new to you you can “break it in” by mixing {Read More}

Roasted Cauliflower Recipe

Roasted Cauliflower Recipe

Let me start this off saying.. I HATE regular Cauliflower.  I have tried to like it to no avail.. but this Roasted Cauliflower Recipe is another story. It simply doesn’t taste the same when it’s roasted vs being steamed. It is crispy, sweet, savory.. yummy!! BUT, I least I think, you HAVE to get it dark brown.  I roast it for a very long time, over an hour, to get this. Try it.. I think you will like it! FrugalFreebiesandDeals.com {Read More}

Oven Roasted Green Beans Recipe

Oven Roasted Green Beans Recipe

 Oven Roasted Green Beans Recipe I will admit it. I am not a vegetable lover. That said, I do like to eat healthily, and I know eating lots of veggies is a part of that. Because of that fact, I do my best to make them taste good. When I discovered roasting them, I was amazed at how it changed the taste from simply being steamed or sauteed. Roasting imparts a yummy slightly sweet and smokey taste that makes veggies {Read More}

Grandma’s Easy Basil Pesto

Grandma’s Easy Basil Pesto

Pesto is SO good. I never tasted it until after college. It was just not something I grew up with. I ordered it one day at an Italian food restaurant and never looked back. That stuff is amazing! It goes with veggies, chicken, shrimp, pasta, I think it would even be good on steak. It’s the perfect easy meal. Boil some pasta and whip this up in a few minutes and your family may think they are dining at a {Read More}

A Week of Gluten Free Meals (free Printable Download)

September 21, 2017 by jlpenner Leave a Comment

I have been Gluten free for over 10 years for health reasons.  It has not solved all of them for me, but I feel like it has helped a lot. When you first turn to gluten free eating as an option whether it’s for medical reasons or dietary health reasons, it can be overwhelming and intimidating. It can be extremely hard to find options for what to eat, and it’s easy to fall into a pattern of eating the same {Read More}

Amazing (and Easy) Grilled Asparagus

Amazing (and Easy) Grilled Asparagus

Veggies? Do you love them or hate them?  Growing up I HATED them.  Give me a plain burger, stuff it with french fries (that is a veggie, right?) and I was good to go. These days things have changed, sort of.  I still would not consider myself a huge veggie lover.  Personally, I would much rather eat chocolate cake (and WHY can’t chocolate cake be a vegetable??). Side note.. in heaven I sure hope that God either makes dessert and {Read More}
