Quinoa is good stuff. It is super good for you (it’s a superfood, gluten free and a complete protein).
If you have not tried it you really should. That said, I think it is an acquired taste. It has a unique flavor.
One of the things I like so much about it is that it cooks as fast at white rice (brown rice takes FOREVER!). SO if the flavor is new to you you can “break it in” by mixing the white rice and quinoa and cooking them together for kind of a pilaf.
I hope you try my Quinoa with Pecans and Raisins. I served it with baked Almond crusted fish and it was good together, a nice change from a noodle or rice side dish (and better for you).

Quinoa with Pecans and Raisins

Ingredients
- 1 cup of dry quinoa (I used red, any is fine)
- 1 1/2 cups chicken stock
- 1/4 tsp salt (if stock is salted, omit)
- 1/2 tablespoon butter
- 1/4 cup chopped pecans
- 1/4 cup raisins
Instructions
- Combine quinoa, chicken stock, salt (if needed) and butter in a medium saucepan.
- Cook on medium, covered for about 20 minutes or until all water is absorbed and quinoa is tender.
- Fluff Quinoa with a fork and add pecans and raisons
- Stir lightly to combine
- Serve
