Quinoa with Pecans and Raisins

Quinoa is good stuff.  It is super good for you (it’s a superfood, gluten free and a complete protein). If you have not tried it you really should.  That said, I think it is an acquired taste.  It has a unique flavor. One of the things I like so much about it is that it cooks as fast at white rice (brown rice takes FOREVER!).  SO if the flavor is new to you you can “break it in” by mixing {Read More}

Roasted Cauliflower Recipe

Roasted Cauliflower Recipe

Let me start this off saying.. I HATE regular Cauliflower.  I have tried to like it to no avail.. but this Roasted Cauliflower Recipe is another story. It simply doesn’t taste the same when it’s roasted vs being steamed. It is crispy, sweet, savory.. yummy!! BUT, I least I think, you HAVE to get it dark brown.  I roast it for a very long time, over an hour, to get this. Try it.. I think you will like it! FrugalFreebiesandDeals.com {Read More}

Coconut Whipped Cream

We still eat dairy in our house, but my oldest daughter can’t, so we do make a lot of dairy free dishes. One of them that I make is dairy free Coconut Whipped Cream. It’s very easy and really is a good substitute for whipped cream,. I will be honest and say real whipped cream is better.. but that said if you are vegan or jsut dairy free and miss real whipped cream this a a very good option. Coconut Pecan Truffles (No Bake!!)

I grew up eating Mexican Wedding Cakes, especially at Christmas.  We lived in Arizona and you could buy them at the grocery store anytime. They are so yummy.  Basically they are a little pecan, melt in your mouth cookie coated in powdered sugar. Well, I just don’t really eat much of that stuff anymore, but I definitely have fond memories! Now that I am gluten free and tend to eat a healthier diet most of time powdered sugar cookies simply {Read More}
