Homemade Coconut Butter

 

When I 1st heard of Coconut Butter I had no clue what it was. But it makes sense.. it’s like Peanut Butter, but with coconut. But this stuff is EXPENSIVE.. you can pay as much as $12 a jar and usually around $8, but there is no reason to pay that much.  By making Homemade Coconut Butter you can cut the costs at least in half.

I have heard that some commercial brands are smoother than Homemade Coconut Butter but I have had Tropical Traditions’ and it was very similar to what I made at home.  It is great for cooking with or in smoothies, you can also use it on crackers like a peanut butter.

Homemade Coconut Butter

Makes about 1 cup

Ingredients
8oz of shredded, unsweetened coconut (we like organic)

Place coconut into a food processor or vitamix. Process on high.  The whole thing will take 5-10 minutes (I was fine with about 5 for cooking, for other purposes you might want it smoother).  It will become very warm and soupy.

note: if you want to quicken the process just add a tablespoon or two of coconut oil to the coconut while you are processing.

Pour into a clean jar.  It will solidify at room temperature.

And it last a long time.. I have read a year or more.
