I would still not call these Protein Rice Crispy Treats the healthiest treat in the whole world. But at least now they have a bit of protein!!
Protein Rice Crispy Treats
3 tablespoons coconut oil or butter
4 cups mini marshmallows
6 cups Gluten Free Rice Crisp cereal (or regular)
1 scoop of plain or vanilla Protein Powder*
1. In large pan or pot melt the coconut oil or butter over low heat. Add marshmallows and stir until melted and combined with the oil. Take off the heat.
2. Add Rice Crisp cereal and protein powder and stir until coated.
3. Using your oiled or buttered hands press the mixture into a 13 x 9 x 2-inch pan coated with cooking spray.Cut into 12 equal squares after cooled.
*I would recommend using whey protein powder, as it should taste the best. We used a plant based powder, because my daughter is dairy free. You may be able to add more than 1 scoop with the whey powder, we could not because the plant based proteins have a strong taste.
