First off, I don’t personally do Weight Watchers, but when I came up with this recipe the other day I thought “I’ll bet this recipe is 0 points and would be great to share for those looking for low cal and Weight Watcher’s recipes”.
Anyway, it’s a keeper, no matter if you are looking for low cal or not. I was surprised at how good it was, the taste of the veggies really shined through.
It’s a very easy recipe and truly is more of a method than a true recipe. You can eat a ton of it and the calories are SUPER low. The WHOLE recipe is under about 100 calories.
This is also a great 5-2 Diet recipe.
But you don’t need to be dieting.. it’ s just yummy to eat!

Ingredients
- 2 cups sliced cucumbers
- 2 cups sliced cherry or grape tomatoes
- 1 cup sliced red, orange or yellow bell peppers
- 1 tsp. dried oregano
- 2 tablespoons apple cider vinegar
- Salt and Fresh Ground Pepper to taste
Instructions
- Combine all ingredients in a medium bowl.
- Toss and eat.
