My daughter is dairy free. Seriously, there is no doubt about it.. she NEEDS to be dairy free.

My husband recently decided he needed to be, too (much to his chagrin).
But dairy free milks are expensive. You can often find coupons, but not all the time. So I usually end up paying at least $3 a half gallon. But it could be as much as $4.
What if you could make it in 2 minutes or less, keep the ingredients on hand for any time, and it cost you $.99 a quart or less?
To make great Coconut Milk Beverage all you need is a can of coconut milk.
Canned Coconut milk comes about 3 ways:
- Light coconut milk (about 250 calories a can)
- Regular coconut milk (about 420 calories a can)
- Coconut Cream (about 510 calories a can)
Note: do not use “Cream of Coconut” , this is a sweetened product and not what this recipe calls for.
You can also find frozen coconut milk in many Asian food stores for a great price.
To make the Coconut Milk Beverage, my rule of thumb is about 250 calories worth of canned coconut milk should make 1 quart of Coconut Milk Beverage.
So to make one quart I would use 1 can of Light coconut milk plus about 18 oz of water to make 1/2 gallon I would use either 2 cans of Light coconut milk, 1 can of Regular coconut milk (less rich) or 1 can of Coconut Cream (richer) plus about 36 ounces of water.
Generally I can get a good can of light coconut milk (no preservatives or chemicals) for about $.99 a can and Regular or Cream for around $1.50-$2.50 a can.
So if you use regular coconut milk you could probably reduce you gallon cost to only around $3. Which is not much higher that dairy milk.
We also really like it, it’s better than they stuff you buy in the store.

Ingredients
- 1 14 ounce can of light coconut milk
- 18 ounces of water
Instructions
- Add coconut milk and water in a pitcher
- Place on top and screw down tightly
- Shake to combine
- Refrigerate
- Use in 3-4 days
- Note: This will separate, just reshape to combine
