Spring time make me start thinking about fresh Strawberries!!
And one of the ways to keep enjoying them throughout the year is to make Strawberry Freezer Jam.
It super quick and you don’t have to worry about canning.. all you need to do is pick up plastic and glass freezer jars.
Yum.. make some fresh bread, too and you are SET!

Ingredients
- 1 pint of fresh strawberries, washed, drained and hulls removed (organic is best)
- 2 1/2 Cup of fresh pineapple (not canned), peeled and finely chopped (remove any brown or hard pieces)
- 7 cups sugar
- 2 packages of (1 3/4 oz) powdered pectin
- 1 cup cold water
- 4 pt either plastic and glass freezer jars
Instructions
- Place strawberries in a large mixing bowl.
- Mash the strawberries with a potato masher.
- Measure 2 1/2 cups strawberries and place in a separate bowl.
- Add the pineapple to the strawberries.
- Slowly add the sugar and stir until well combined.
- Place the cold water in a saucepan over medium.
- Add pectin.
- Stir continuously until water begins to boil.
- Boil 1 minute then remove from heat.
- Pour the hot water mixture in with the fruit.
- Stir well to combine.
- Continue stirring for about 4 minutes.
- Pour into the pt freezer containers and cover.
- Let stand at room temperature for 24 hours.
- Freeze after 24 hours.
- This jam will stay good in the freezer for up to 6 months.
- And to use, remove from freezer and allow to come to room temperature, about 1 hour.
- Cover and refrigerate it for up to 3 weeks.
