Slow Cooker Nachos

 

My husbands ABSOLUTE favorite meal is taco salad. Not tacos… taco salad. It’s a throwback to his childhood.

He and I started dating when I was 16 and he was 17 (I hear a song coming on) in Arizona and one Sunday, he invited me over for Sunday dinner for taco salad. I gladly accepted, went over and sat down at the table. His mom spread out all the toppings on the table to make your plate and there was a small bowl of red sauce. I had no idea what it was, but being the semi-picky eater I was I tasted it before I put it on anything.

“Yuck,” I luckily said inside my head, “spicy ketchup.” I put it back.

But he put it all over his salad.

Later, I asked about it and he told me growing up in Minnesota, they didn’t have Mexican food so his mom improvised and made “salsa” out of Tabasco and ketchup.

Yeah… growing up in Arizona means salsa is NOT Tabasco and ketchup..lol. But I guess it was clever on his mom’s part. To this day, his STILL asks for the concoction. I still refuse. He’ll have to wait until we visit his parents.

This Slow Cooker Beef and Bean Nachos makes a great, easy meal and can be served as “nachoie” or “saladie” as you like.

Ketchup and Tabasco mix optional.

oh.. and yes, we were babies.. Some hair, right?

Ingredients

  • 1 lb ground beef (or turkey), cooked and drained
  • 1 can refried or whole pinto beans
  • 1 can red kidney or black beans ( Do not drain them)
  • 2 tablespoons tomato paste
  • 1 pkg. taco seasoning
  • 1 tsp. garlic powder
  • 1 cup of your favorite salsa
  • 1/2 cup water
  • salt and pepper to taste
  • 8 oz of your favorite Shredded Cheese (optional, plus more for garnish)
  • Tortilla chips
  • Extra toppings of your choice (lettuce, tomatoes, green onions, more salsa, jalapenos, avocado or guacamole and sour cream)

Instructions

  1. Brown ground beef in skillet on stove. Drain off any grease.
  2. Add ground beef, refried beans, kidney beans, tomato paste, taco seasoning, water, and garlic powder to crockpot.
  3. Mix gently
  4. Cook on low 4-6 hours or high 2-3 hours.
  5. The last 20 minutes, open slowcooker and evenly sprinkle cheese over mixture. Return cover.
  6. Spoon meat/bean/cheese mixture over tortilla chips.
  7. Top with extra toppings! Enjoy

    I made this today to enable everyone to eat when they could (it's a busy, busy night). It was a huge hit! Teenagers and nachos are a great combination. Thanks for sharing this delicious recipe!

    Hi! Just wanted to double check, the 1 cup salsa should go in with the meat, beans, etc in the slow cooker for the whole 4-6 hours? Thanks, we are looking forward to trying this!
