Coconut Oil Frosting… MMMMmm

So at the FFD household we LOVE our coconut oil.  We make yummy popcorn with it, I use it for baking and all sorts of things.. it’s even good to fry eggs in!!

I also list a lot of deals on it, since I love it so much.. so I though I would give another use for it that you may want to try! Coconut Oil Frosting!

Now.. I will not call this recipe healthy food.. but it is yummy!

Coconut Oil Frosting

Ingredients
1/4 cup Organic Virgin Coconut Oil
16 oz Powdered Sugar (make sure wheat is not in the ingredients if gluten free)
1/2 cup Cocoa Powder
1 tsp. Vanilla Extract
1/4 cup Cream or Full fat Coconut milk (added 1-2 Tablespoons at a time)

Instructions to make your Coconut Oil Frosting:

1. Cream Organic Virgin Coconut Oil in a mixer or with hand beaters.
2. Add powdered sugar and cocoa powder to Coconut Oil.
3. Add cream to the Coconut Oil mixture. ( I would start with 2 tbsp. of milk and add 1-2 tbsp. at a time to achieve the right consistency).

Enjoy your Coconut Oil Frosting!!

Note.. if you just want Vanilla Flavor I would add a tsp. or two of vanilla and then cut down on the cream.. and coconut oil does melt fairly easily, so make sure you eat it up right away or refrigerate what ever yummy thing you frost it with!!

    Thank you for the idea. Here's my variation -- very simple. The product is a chocolate dip or spread you can put on any healthy bread or whatever your imagination demands. 1/4 cup hard coconut oil -- put into pyrex bowl and nuke until melted 1/4 cup cocoa powder (unsweetened) -- dump into same pyrex bowl 1/2 cup Splenda or whatever sweetener you prefer -- dump into same bowl and mix 1 t. vanilla (optional) a small hunk of cream cheese (totally optional) Mix everthing rigorously and put back into microwave for a minute. Stir. It will be smooth delicious dip to snack on when you need a very nutritious chocolate fix.
