I love eating healthy? How about you?
Last year I did GREAT on reducing my sugar consumption for about 6 months. During that time I ate almost no added sugar.. just natural sugars in foods like fruit and natural sweeteners like Truvia.
I’m going to be honest. I fell off the bandwagon. We went to Hawaii in the summer and I cheated a bit.. it’s ok right? It’s vacation. Well, it wasn’t that big of a deal but the scale creeped up. So after the trip I went back to no added sugar and guess what… the weight didn’t come off. I had no idea why, but it didn’t.
This was frustrating and… I gave up. And now after 7 more months, my weight has increased a few pounds partially due because of too much added sugar.
I’m pretty sure I gave up too soon. I should have stuck with it since I feel better anyway without the added sugar.
So it’s time to get going again! And this was a perfect time for me to try out Truvia® Natural Sweetener Spoonable. It great because it’s easy to use for so many recipes and tastes yummy.

I used Truvia® Natural Sweetener Spoonable for this recipe that I picked up at my local Walmart in my Almond Chicken Satay and it was delish! It’s a perfect twist on tradition peanut satay.
It was also really easy to make, just marinade the chicken, skewer it, bake it and whip up the almond satay dipping sauce. You can serve this as an appetizer or a fun dinner with rice.

Almond Butter Chicken Satay

Ingredients
- 1 1/2 pound chicken breast, cut into 1 inch strips
- 10-15 wooden skewers. soaked in water for 1-2 hours
- Marinade
- 2 tablespoons fish sauce
- 1 teaspoon graded, fresh ginger
- 1/4 cup lime juice
- 1 tablespoon Truvia® Natural Sweetener Spoonable
- 2 tablespoons soy sauce (gluten free if necessary)
- 1 tsp garlic chili sauce
- 1 tsp garlic powder
- 1 tablespoon olive oil
- Almond Butter Satay Sauce
- 3 tablespoons creamy almond butter (no sugar added)
- 1/4 cup light coconut milk
- 2 teaspoons fish sauce
- 1 tablespoon lime juice
- 2 teaspoons garlic chili sauce
- 1 tablespoon Truvia® Natural Sweetener Spoonable
- 1 tablespoon soy sauce (gluten free if necessary)
Instructions
- Combine all marinade ingredients in a zip top bag and combine
- Add chicken, and seal bag
- Place in the refrigerator for 2 hours
- Preheat oven to 400 degrees
- Spray foil lined cookie sheet with non-stick spray
- Remove chicken from marinade and skewer each piece, place on foil cookie sheet
- Bake for 15-20 minutes
- Remove and plate
- Almond Butter Satay Sauce
- In a medium bowl combine all sauce ingredients and stir until smooth
- Serve room temperature along side chicken skewers
