20 Minute Pasta with Sausage and Peppers

20 Minute Sausage and Peppers. This dish is super easy and basically takes no time (another reason why this MOM loves Sausage and Peppers!). Because who has time for long, drawn out meals with a ton of prep everyday? Probably not you, and definitely not me.

Our family LOVES Sausage and Peppers.

This dish is super easy and basically takes no time (another reason why this MOM loves Sausage and Peppers!). Because who has time for long, drawn out meals with a ton of prep everyday? Probably not you, and definitely not me.

For another easy meal: BBQ Chicken Salad with Cilantro Ranch Dressing

We use our favorite Gluten Free Pasta but you are welcome to use some cute Bowties or your fav.

If you want a slightly heartier version stir in a small can (around 15 oz) of crushed tomatoes with the peppers.

Ingredients

  • 12 oz. Bowtie or Gluten Free Pasta
  • 1 lb. Italian Sausage, cut into 1/2 inch slices (check for Gluten Free)
  • 1 Red Onion, halved and thinly sliced
  • 1 Yellow Pepper, thinly sliced
  • 1 Red Pepper, thinly sliced
  • 3 Tbsp. Olive Oil
  • 1 Tbsp. Red Wine Vinegar
  • 1/2 Lemon Juice
  • 1 tsp. dried Italian Seasoning
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 2 Tbsp. Fresh Parsley, chopped (optional)

Instructions

  1. In a stock pot cook pasta until al dente, drain and set aside.
  2. Return the pot to medium high heat and brown the sausage.
  3. Once the sausage is browned add onion, peppers and cook until softened and sausage is cooked through, 4-6 minutes.
  4. In a small bowl whisk together the olive oil, vinegar, lemon juice, Italian seasoning, salt and pepper.
  5. Toss the pasta with the sausage and peppers
  6. Remove from heat
  7. Serve hot topped with parsley (optional)

Serve hot topped with parsley (optional)
