Personally, I find back to school means more time for me to get the things done that I need to. But this doesn’t mean I don’t like easy solutions for lunches!

These are all great dinner starters or can be eaten alone for a quick meal.

The Minute® Ready to Serve Multi-Grain Medley is a blend of six 100% whole grains including brown rice, quinoa, barley, oats, wheat and rye. Minute® Ready to Serve White Rice is a long-grain, natural white rice . You can mix it with your favorite veggies or protein. Learn more about the different varieties here.

I was send several packages of Minute® Ready to Serve Rice to give a try and I whipped up a yummy Tangy Mango Red Pepper Rice Salad that could be eaten alone for lunch or as a side.

It is super easy and comes together in just a few minutes. If you are looking to serve a larger bunch, simply double or triple the recipe.

Ingredients

  • 2 cups Minute® Ready to Serve White Rice (4.4 ounces each)
  • 1/4 cup chopped mango
  • 1/8 cup chopped red onion
  • 1/8 cup chopped red pepper
  • 1 tablespoon chopped cilantro
  • 2 tablespoon lime juice
  • 1 tablespoon olive oil
  • 2 teaspoons sugar
  • 1/8 teaspoon salt

Instructions

  1. In a small bowl whisk together lime juice, olive oil, sugar and salt. Set aside.
  2. Heat Minute® Ready to Serve White Rice according to package directions then set aside to cool for 5-10 minutes.
  3. After rice cools add to medium bowl with onion, red pepper, mango, cilantro and dressing.
  4. Gently stir together.
  5. Can be eaten immediately but best if you allow to set in refrigerator for one hour.
