I was send several packages of Minute® Ready to Serve Rice to give a try and I whipped up a yummy Tangy Mango Red Pepper Rice Salad that could be eaten alone for lunch or as a side.
It is super easy and comes together in just a few minutes. If you are looking to serve a larger bunch, simply double or triple the recipe.

Tangy Mango Red Pepper Rice Salad

Ingredients
- 2 cups Minute® Ready to Serve White Rice (4.4 ounces each)
- 1/4 cup chopped mango
- 1/8 cup chopped red onion
- 1/8 cup chopped red pepper
- 1 tablespoon chopped cilantro
- 2 tablespoon lime juice
- 1 tablespoon olive oil
- 2 teaspoons sugar
- 1/8 teaspoon salt
Instructions
- In a small bowl whisk together lime juice, olive oil, sugar and salt. Set aside.
- Heat Minute® Ready to Serve White Rice according to package directions then set aside to cool for 5-10 minutes.
- After rice cools add to medium bowl with onion, red pepper, mango, cilantro and dressing.
- Gently stir together.
- Can be eaten immediately but best if you allow to set in refrigerator for one hour.
