Slow Cooker Chipotle Chicken

This slow cooked Chipotle Chicken recipe is super simple.  use it for taco salad (like I did), for tacos, sandwiches with pepper jack cheese, enchilada filling… endless possibilities.

Chipotle Chicken

Serves about 5

Ingredients
1 1/2 lbs boneless, skinless chicken breasts (or thighs if you prefer)
1 cup of your favorite salsa
1 chipotle pepper with about 1 tsp adobo sauce* (use more if you like, but this stuff gets spicy)

Directions
Add chicken, salsa, chipotle pepper and adobo sauce to slowcooker. Cook on low for about 6 hours (or high for 3-4) or until tender. When the chicken is tender remove and shred. Remove chipotle (unless you like it very hot- if so smash it up and mix into the cooking sauce). Mix in as much sauce as you like in to the chicken.

Serving Suggestion: use for taco salad with black beans, romaine, cheese, and tomatoes and corn chips, if you like.

*note: I split the rest of the canned peppers into 2 baggies and froze for later use.
