This is a great way to use inexpensive cuts of pork stew meat (that I got for under $2 a lb)!! I cooked about 3 lb of the pork and split it in two- one for the BBQ and the other to use for Carnitas for tacos!
Slow Cooker BBQ Pork
Pork Ingredients
1 1/2 lbs pork stew meat (or cook more like I did to use for tacos or something else)
1 bullion cube (I use gluten free)
1/2 tsp garlic powder
1 tsp onion powder
salt to taste
BBQ Sauce Ingredients
1/2 cup ketchup (I use one with no high fructose corn syrup)
1-2 tbs molasses
1 tsp mustard
Directions
Add pork, bullion cube, garlic powder, onion powder to slowcooker. Cook on low for about 6 hours or until tender. While meat is cooking combine ketchup, molasses and mustard in a small bowl and set aside in your refrigerator. When the meat is tender remove and shred. Mix in as much BBQ as you like in to the meat. You can reserve some to add on top when serving. Serve on buns if you like.
