Green Chile Chicken SaladWho loves real cheese?

I do. Probably a lot of you do, too! Cheese is good in and on almost everything it seems.

It’s a perfect addition to kick up your standard recipes and with Weight Watcher cheese products you can even stay on track with summer activities and get-togethers. Weight Watchers American singles and Whipped and Original Cream Cheese make it easy.

Green Chile Chicken Salad

I came up with a fantastically easy lunch salad that is perfect by the pool for a lazy day or lunch with friends.  I love how it takes an old favorite of chicken salad to a new level.  It would be delicious with fresh cut fruit!

My Green Chile Chicken Salad uses Weight Watchers Whipped Cream Cheese instead of Mayo, and it gives it a light and tangy flavor that is a perfect pairing with the Mexican flavors of green chiles, cumin, and cilantro.  I even added a little crunch with jicama.

This chicken salad is perfect on a bed of lettuce, stuffed in an avocado or a tortilla wrap.

And you will never notice the difference between Weight Watchers Whipped Cream Cheese because it is reduced fat.  It’s real and all natural cheese and tastes great.

If you want to pick some up for this recipe, just head to your local Ralphs like I did. Find your local Kroger store here.

This Green Chile Chicken Salad comes together in minutes, and everyone will be impressed.

As a note: if you love fresh onions, this recipe would be great with a chopped green onion.  I don’t happen to be a fan of the texture, so I used onion powder.

What is YOUR favorite way to use cheese?

I really like the idea of using whipped cream cheese to replace mayo. And green chiles sound awesome in chicken salad! [client]
