easy risotto recipes

I made a quick lunch for two of 10 minute Chicken and Mushroom Risotto with Minute® Ready to Serve Brown Rice. Yep… risotto for lunch, and made in 10 minutes.
Now keep in mind this is not traditional risotto. But it definitely had the taste and richness of the long cooked dish, without all the hassle. And if you are cooking for 1 simply reduce the recipe in half (I would also guess you could double it for more guests).

10 Minute Chicken and Mushroom Risotto

Ingredients
- 1 cup cooked, diced chicken breast
- 2 cups of Minute® Ready to Serve Brown Rice, 4.4 oz each (White Rice will work, too).
- 4 oz of sliced fresh mushrooms
- 1/4 cup parmesan cheese, grated (plus more for garnish)
- 1/2 cup low sodium chicken broth
- 1/4 tsp apple cider vinegar
- 1/4 cup heavy cream
- 1/2 tsp onion powder
- 1 tsp fresh chopped rosemary (or about 1/3 tsp dried)
- 1 tablespoon butter
- 1/8 tsp black pepper
- 1/8 tsp salt
Instructions
- Heat butter on medium in a large pan
- When melted add mushrooms and sauté for 2-3 minutes
- Sprinkle mushrooms with onion powder, salt and pepper and stir
- Reduce heat to medium low.
- Deglaze pan with chicken broth and apple cider vinegar.
- Add rice, chicken and rosemary and stir to combine.
- Cover and heat for two minutes
- Uncover and turn off heat
- Add cream and stir
- If the risotto is too dry add up to 4 tablespoons of broth, 1 tablespoon at a time.
- Stir until desired constancy.
- Fold in parmesan cheese
- To serve, sprinkle with additional parmesan cheese
