I absolutely LOVE a crock-pot! They are extremely easy to use and make some of the best meals. There are a few main recipes I cook in mine on a semi-regular basis. One being pinto beans and ham bone (mmmm…. ) an another being an amazing vegetable chili!
You can used canned veggies or fresh veggies, it’s up to you. I’ve done both but for today’s meal I just used canned since I was in a hurry. You can also throw some ground beef in there with it if you choose, the hubby requests it in ours so I add it.
You can also take away and add different veggies in the recipe, it’s really so easy to mix and match with whatever you personally like! We also like to enjoy this with Tostitos scoops.
Vegetable Chili
– 3 cans of diced tomatoes
– 1 24oz can of tomato sauce
– 2 cans of kidney beans (drained and rinsed)
– 2 cans of black beans
– 1 tsp of red pepper
– 3 to 4 tablespoons chili powder (range this on how spicy you like your chili)
Optional additions :
– Carrots
– 1 can of corn (drained)
– Onions
– red or green peppers
– Mushrooms
– Ground beef/turkey
– & More
Let it cook for about 4hrs in crock pot and you’re good to go!
