Broccoli Cashew Chicken
Who’s ready for dinner??
Last night I made this Broccoli Cashew Chicken and it turned out great.. no recipe or anything.
So I am sharing it with you so your family might enjoy it!
It was funny because there were two pieces of broccoli left and I didn’t know quite what to do with them and was just going to toss them (I know.. bad “frugal momma”).
But just as I was doing it my youngest stepped over and asked for them.. so way to go “teachin’ your kids to like veggies momma“.. lol!

Ingredients
- 1 tablespoon apple cider vinegar
- 2 tablespoons soy sauce (we use gluten free)
- 1 teaspoon sesame oil
- 2 tablespoon palm sugar or brown sugar
- 3/4-1 pound of raw boneless skinless Chicken breast diced small
- 2 teaspoons cornstarch
- 3 teaspoons of olive oil separated
- 16 ounces of frozen or fresh broccoli crowns
- 1/2 to 1 small onion sliced (depends on your taste)
- 2 cloves of garlic minced
- 1/2 cup cashews, whole or pieces ( I used salted)
Instructions
- In a small bow whisk together vinegar, soy sauce, sesame oil and sugar
- Set aside
- Add 1 teaspoon of olive oil to a large pan over medium heat
- When hot add onions and cook until slightly opaque (2-3 minutes)
- Add broccoli to onions and cook until browned slightly (5-6 minutes)
- Add garlic and cook for 1-2 more minutes.
- Remove veggies from pan and set aside.
- Sprinkle chicken with cornstarch and toss to coat
- Add 2 teaspoon oil to pan and add diced, raw chicken
- Cook until slightly brown on each side and cooked through
- Add back in veggies and stir to combine
- Pour in your vinegar/soy mixture and allow to heat
- Stir together, chicken, veggies and sauce to mix and heat (1-2 minutes)
- Stir in cashews
- Serve over rice, quinoa, or noodles
