Greek Salad With Quinoa This was so good, even yummier that I thought it would be, to be honest.

Recently we were headed to a summer potluck and I needed to bring a side. I headed to the store to grab something, but I did not know what I was going to make yet. So I racked my brain in the store and this is what I came up with, Greek Salad With Quinoa.

It’s gluten free and really healthy.  Quinoa is a great source of a complete protein.  So this is a great vegetarian and gluten free dish.  If you wanted it to be vegan just leave out the cheese.

Let me know if you try it.. it’s great!
